Ingredients
  1. I small honeydew melon or 2 galia, cantaloupe or rock melons
  2. 375 g (12 oz) tomatoes, skinned mint sprigs, to garnish
  3. MINT DRESSING:
  4. 2 tablespoons sunflower oil
  5. 2 teaspoons sherry vinegar
  6. 1 tablespoon chopped fresh mint
  7. pepper
Method
  • Cut melon or melons in half, remove seeds, then cut the flesh into cubes (or balls using a melon scoop) and place in a bowl.
  • Quarter the tomatoes, remove seeds and cut each wedge across into 4 pieces. Add to the melon.
  • To make the dressing, mix all the ingredients together in a bowl or screw-top jar. Pour over the salad and stir gently. Cover well and chill for flavours to mingle.
  • Remove from refrigerator 30 minutes before serving. Spoon into 4 dishes or, if using the smaller variety of melons, spoon salad into the shells. Serve garnished with sprigs of mint.
