Ingredients
  1. 1 ½ lb. beef or lamb
  2. 1 teaspoon saffron, soaked in
  3. 1 tablespoon water
  4. 1 oz. each pistachios, almonds, raisins
  5. 2 cloves garlic
  6. 1-inch fresh root ginger
  7. 2 onions
  8. 1 ½ , lb.pumpkin or marrow oil for frying
  9. 2 sticks cinnamon
  10. 2 cardamoms
  11. 1 teaspoon chili powder
  12. Pinch of salt
Method
  • Trim meat and cut into cubes. Soak saffron in the water for an hour. Finely mince or chop pistachios, almonds, raisins, garlic and ginger. Chop onions; dice pumpkin or marrow and fry onions in a little oil until golden. Add nuts, raisins, garlic and ginger. Continue to fry for a few minutes then add meat, pumpkin, cinnamon, cardamoms, chilli powder and salt. Fry until pumpkin is cooked or pulped and meat tender. Add saffron, cook for a further 10 minutes and serve.
