Ingredients
  1. 500 g (1 lb) tomatoes, skinned, seeded and chopped
  2. 1 small onion, chopped
  3. 1 olive garlic, crushed
  4. ½ teaspoon celery salt
  5. 1 teaspoon tomato puree (paste)
  6. 1 teaspoon white wine vinegar
  7. 3 teaspoons powered gelatin
  8. Salt and pepper
  9. TO FISH:
  10. 7.5 cm (3 in) piece cucumber, peeled and diced
  11. ¼ green pepper (capsicum), seeded and diced
  12. 2 sticks celery, diced
  13. Mustard and cress, to garnish
Method
  • Put tomatoes, onion, garlic, celery salt, tomato puree (paste) and vinegar into a saucepan and simmer until soft and pulpy. Sieve mixture into measuring jug.
  • Sprinkle gelatin over 4 tablespoons water into a small bowl and leave to soften for 2-3 minutes stand bowl in a saucepan of hot water and stir until dissolved. Allow to cool, then stir into the tomato mixture, making up to 625 ml (20 fl oz/ 2 ½ cups) with water if necessary. Season with salt and pepper. Pour into 4 individual 155 ml (5 fl oz/ 2/3 cup) ring moulds and refrigerate until set.
  • To turn out, dip each mould into a bowl of hot water for a few seconds, then invert onto a serving plate.
  • Arrange diced vegetables around each jelly and serve garnished with mustard and cress.
