Ingredients
  1. 6 large eggs, hard-boiled
  2. I canned pimento, cut into strips 60 g (2 oz) anchovies, drained dill sprigs, to garnish
  3. TONNATO SAUCE:
  4. 1 quantity Mayonnaise, see page 12
  5. 100 g (3 ½ oz) can tuna fish, drained
  6. 1 tablespoon lemon juice
  7. 1 tablespoon single (light) cream or natural yogurt
  8. 1 teaspoon capers, drained and chopped
Method
  • To make sauce, put mayonnaise into a blender or food processor with tuna fish, lemon juice and single (light) cream or natural yogurt and work until smooth. Stir in the capers.
  • Halve eggs lengthwise and arrange on 4 plates. Spoon the sauce over the eggs and decorate with strips of pimento. Halve the anchovy fillets, then curl them round and place between the eggs. Serve the eggs garnished with sprigs of dill.
