1 egg white
2 oz brown sugar
1 tsp flour
2 tbsp cocoa powder
2 tbsp cream
1 oz butter, melted
1 oz flaked almonds
Mix egg white, brown sugar, flour, cocoa, cream and butter with a whisk so no lumps remain.
Put a tbsp of the mixture on a baking tray and spread to form a circle, sprinkle flaked almonds on it and bake at 220°C for 4-5 minutes or till the edges start to darken.
Immediately remove and lift carefully whilst hot and roll onto a rolling pin, curve slightly.
When they will cool, they will resemble tuilles or tiles.
