Ingredients
  1. Few Batavia leaves
  2. Few lollo rosso leaves
  3. 60 g lamb’s lettuce
  4. 60 ml extra virgin olive oil
  5. 2 large slices calves, weighing 250 g, cut into ribbons
  6. 1 tablespoon shredded fresh sage leaves
  7. 2 tablespoons balsamico vinegar
  8. Salt and pepper
  9. Pine nuts, to garnish
Method
  • Tear salad leaves into smaller pieces and arrange on 4 plates.
  • Heat oil in a frying pan, add liver and sage and cool for 2-3 minutes, stirring constantly. Remove with a slotted spoon and divide between the plates.
  • Pour vinegar into pan, season with salt and pepper and warm through. Spoon over the salads and serve garnished with pine nuts.
