Ingredients
  1. 250 g (8 oz) dried butter beans, soaked overnight
  2. salt
  3. 185 g (6 oz) streaky bacon, rinds removed snipped chives, to garnish
  4. TOMATO DRESSING:
  5. 185 g (6 oz) tomatoes, skinned, seeded and chopped
  6. 1 teaspoon tomato puree (paste)
  7. 3 tablespoons extra virgin olive oil
  8. 2 teaspoons lemon juice
  9. salt and pepper
Method
  • Rinse butter beans, put into a saucepan, cover with water and simmer for about 1 hour until tender. Add salt during last 5 minutes of cooking.
  • Meanwhile, cook bacon in a frying pan until crisp. Remove from the pan and drain on absorbent kitchen paper, then crumble into small pieces.
  • To make the dressing, put all the ingredients into a blender and work until tomatoes are pulpy. Drain beans, put into a serving dish and pour over the dressing. Mix in bacon. Leave to cool. Serve garnished with snipped chives.
